Varieties: Albillo Mayor and Pirulés

Average production: 3,000 kg/Ha
Type of soil: Mostly sandy loam.
Location of the vineyards: Located in the outskirts of Aranda de Duero. Manual selection of vineyards over 70 years old.
Type of cultivation: Sustainable agriculture

Alcoholic fermentation: In concrete tanks Direct pressing and fermentation in concrete tanks with indigenous yeast.
Malolactic fermentation: In oak barrels.
Aged in earthenware jars and 225 liter Hungarian oak barrels for 6 months and the rest of the time in bottle.

Alcoholic content: 12º.
Production: 1,232 numbered 750 ml bottles.

Tasting notes

Visual phase: Straw yellow

Nose: White fruits, citrus tones, quince, with great florality, hints of wood.

Tasting phase: Smooth entry, glyceric, long, fresh with citric and velvety aftertaste.

Keeps for 20 years.
Recommended serving temperature: 9ºC to 11ºC.
Ideal pairings: White meats, fish, seafood, very versatile.
